Egg Production:

Last year our hens produced 32 dozen per week at their peak and it was difficult at times to meet demand.  This was all by word of mouth.  Since we are advertizing this year and will be regulars at the Covington, Va. Farmer’s Market, we have decided to add an Egg Mobile to our operation .  With the addition of the Egg Mobile we will begin moving our hens through our pastures after the cattle have grazed through.  Previously we have only free ranged our layers in our yard which explains why I haven’t had to cut grass but once a year.   Its been kind of nice not to have to worry about cutting the grass but the addition of 200 more layers and the Egg Mobile will allow us to double our weekly egg production while sanitizing and fertilizing our pastures.  I just hope my lawn mower will start this year.

Our eggs have the distinguishing trait of all pasture produced eggs...the tall and proud dark yellow yokes.  We do not grade our eggs but we try to equal out the sizes i.e. one small egg gets one jumbo egg.  We wash our eggs in an  OMRI approved chemical free enzyme solution.
